    Chef Woodman,
    I just made your marinated and steamed fish (used cod instead of tillapia) and it was fabulous! I would like to post it on my blog, referencing your new cookbook and website. Are you ok with that or do you want me to directly refer to your website to link to the cookbook?
    P.S.: Former frequent patron of Heidi’s and am very excited to dine at your new establishment.

    Hi Chef, Don’t be worried by my timelesscafe-basically a coffee shop. Loved you on Fox today and your recipe for Seared Salmon. I would like to take this to my next party. It says to serve immediately. Do I have a few hours within that immediately? Also just on google all about fish sauce–sorry but can I use a substitute? Some writers mentioned soy sauce. Also are the spring roll wrappers available in grocery store? Okay, I may have missed some of this talk but loved the dancin moves!!!

    Diane, I can’t talk too much now, I am waiting for my phone to start ringing off the hook with dance show offers.
    You can get the wrappers at Cub Foods Asian aisle, Shuang Her on Nicollet and 27th. Left side of store.
    If you want to store the rolls, you can make them ahead, but give them a little spray of pam, or better still rub a little sesame oil, after you roll them so that they won’t stick.

    Long time reader, first time writer. Any advice on picking up foie gras in the metro? Also – love the new space, the food, and the staff. There’s not a resto in the city that makes me feel more welcome than Heidi’s. Keep up the good work!

    I grew up in Lachine, next to Dorval. Haven’t really been back in years, but I would love to. Is the Dorval Tavern still there? Spent many hours of my youth there.

    Yes they call it the Pub Le Vieux Dorval now.
    I remember a few hours being spent there as well.
