On many levels molecular gastronomy and it’s heavy reliance on additives and chemicals, reminds me of breast augmentation surgery for cosmetic purposes. The results achieved through artificial means, are thought by some to be “superior”, and the risk to health, are outweighed by having “better” breasts.
There is something perverse, and sad about this notion of beauty. That these uncommon results justify the means, whatever the cost. It seems bizarre, odd frankly.

GEEEzuz. Those might as well have hit me in the face. Oncoming vehicle alert, please. Damn near fell backward outa my chair at the office.
But yeah, as cool as some of the molecular gastronomy pathways have been, I often found myself wondering the same things. Although never arrived at the breast augmentation metaphor. A good one, it is.

Where DOES all that extra skin come from?
