Soft Opening

Although soft opening is so pornographic sounding, I can assure you that in the upcoming days as we roll out Birdhouse, for some test runs lunches, breakfasts, and brunches here and there the folks in the kitchen may feel a little hot, and nothing will be soft about the first full-on brunch.

Meanwhile Heidi will be giving a talk at the Food Service News deal today on desserts.  Mike Mitchelson is doing a really nice job with these industry talks that are very informative. The man deserves much credit for bringing together different sides of the industry.

I’ll be back at the mother ship to roll out the new menu with the team.  Credit is due to Ben, and Jes for bringing great ideas to the table, and working very hard to get those ideas refined and stellar.  I think the pork trotter wonton may just be another lamb dish-I might be buried with one-at least if Heidi has anything to say about it.  Though if Heidi has anything to say about it, I doubt they will find my body. ;)

Patio should be open for much of the week, so we have plenty of walk-in room for any last minute diners.

Heidi’s staff party last night at Birdhouse, I did a keg stand, as did Heidi-but she was/is Alpha Phi so you know what they say about that–neither do I.

    Knowing that there, sadly, will not be keg stands involved, will y’all be “soft open” if we were to stop by Friday 6/15 or Saturday 6/16?! Or do we need to wait for the official grand opening to enjoy a Birdhouse dinner?

    Thanks much for the shout out and thanks again to Heidi for jumping into the fray during a busy time for y’all. Her “Five Knows” hit the mark with many in the audience, one fella who owns a St. Paul eatery told me he was making a change as soon as he got back to his place that day based on what he heard from Heidi. And that’s what it’s all about.

    Heidi did a great job speaking at the Food Service event. I enjoyed listening to her passion and enthusiasm she has for the business and the great things you guys are doing at both establishments. I can’t wait to try out the new Birdhouse. Oh, and PS, her carrot cake was smashing good.
